INGREDIENTS
1 1/2 cups/280g/9 oz couscous
1 1/2 cups/375 ml/12 fl oz hot chicken stock
3 tbsp sun, dried tomatoes, without oil
2 tbsp chopped fresh mint
4 spring onions, chopped
METHOD
1. Place couscous in a heatproof bowl, pour over stock, cover and stand for 10 minutes or until liquid is absorbed.

2. Place a nonstick frying pan over a low heat, add couscous, tomatoes, mint and spring onions and cook, stirring, for 7 minutes or until heated through.
