INGREDIENTS
200g ricotta cheese
1 cup/200g low fat natural yoghurt
1/4cup/60ml maple syrup
1 tbsp orange, flavoured liqueur
500g/1 lb mixed berries of your choice, such as blueberries and raspberries or strawberries and blackberries
440g/14 oz canned peach slices in natural juice, drained
6 strawberries, halved
1/2 cup shredded coconut, toasted
METHOD
1. Place ricotta cheese, yoghurt, maple syrup and liquer in bowl and beat until smooth. 

2. Place a layer of ricotta mixture into the base of a porfait glass, top with a layer of mixed berries, then a second layer if ricotta mixture, a layer of peaches and a final layer of ricotta mixture. Decorate with strawberries and coconut. Repeat with remaining fruit and ricotta mixture to make six desserts.
