Slice the courgettes diagonally and scatter in a roasting tin with the peppers and red onions.Drizzle with the oil and bake in a preheated oven at 220C(425F)Gas Mark7 for 25 minutes or until lightly coloured.Add the mushrooms and cherry tomatoes,stir and roast for a further 10 minutes.
Scatter the mozzarella cheese and roasted vegetables over the pizza bases to within 1cm(1/2inch)of the edges.Sprinkle the grated Cheddar on top and leave to rise for 20 minutes.Bake for 15-20 minutes until golden.
