INGREDIENTS
1 large green zucchini, cut in long strips using a peeler
4 walnuts, halved
DRESSING
2 tbsp extra virgin olive oil
1 tsp lemon juice
1 clove garlic, minced
50g feta cheese, crumbled
salt and pepper to taste
rosemary sprig to garnish
METHOD
Wash the zucchini strip in water, drain well and keep aside.

Mix the dressing together, pour over the strips of zucchini, tossing gently and crumble the feta over it. Add walnuts.

Add salt and pepper to taste. Garnish with a sprig of rosemary.

Serve cold.
