INGREDIENTS
1 large round baingan, roasted on a gas flame
1 onion, finely chopped
1/2" piece ginger, chopped finely
2 tomatoes, finely chopped
2 green chilies, finely chopped
1/2 tsp red chili powder
1/2 tsp garam masala
1/4 tsp amchoor
1 1/2 tsp salt, or to taste
1/2 tsp bhuna jeera
1 tsp oil
2 tbsp chopped hara dhania for garnishing
METHOD
1. Rub a little oil over the baingan and roast over a gas flame until the skin gets charred and starts to peel off and the flesh is soft.

2. Remove the charred skin of baingan. Wash and mash the flesh with a fork. Mix all ingredients, including 1 tsp oil, with the baingans in a large, but shallow oven proof dish.

3. Preheat oven at 200C. Bake bharta for 40 minutes, stirring in between. Serve.
