Grind almonds in food processor until fine, set aside.
Saute the garlic and mushrooms in the butter till the liquid evaporates. Add salt, thyme, pepper and port. Simmer until mushrooms are dry. Blitz the mushroom in food processor with the almonds and butter. Add port to the till you get the consistency you prefer.
Chill for at least 30 minutes to blend flavors.
Serve over thin, round apple slices and melba.
