INGREDIENTS
1 can (425g) asparagus
4 slices white bread, crusts removed
500g potatoes, boiled, peeled and mashed
200g cheese, grated
2 small onions, chopped
1/2'' piece ginger
3 green chilies
2 tbsp butter
3 cups milk
2 tbsp white flour
oil for frying
salt to taste
METHOD
Soak bread in a little water and squeeze. Grind green chilies and ginger to a paste. Mash potatoes and combine with salt, ginger-chili paste, onions, 1/2 the cheese and the bread. Make lime size balls and fry on high flame. Keep aside. Heat 2 tbsp butter, 2 tbsp flour and 3 cups of milk to make white sauce. Add the asparagus and the remaining cheese to the white sauce. Mix well. Arrange the koftas in greased dish, and pour white sauce over. Sprinkle with some grated cheese and bake for 10-15 minutes until golden brown.
