INGREDIENTS
400g plain white flour
100g semolina
1/4 tsp baking soda
1/2 tsp baking powder
salt to taste
2 tbsp yoghurt
2 1/2 tsp sugar
5 tsp ghee
METHOD
Sieve the flour, semolina, baking soda, baking powder and salt. Whisk sugar with yoghurt. Make a well in the sieved flour, pour water (approximately 1 cup) and the yoghurt mixture, gradually mixing, and knead into dough. Cover with a moist cloth and keep for 10 minutes. 

Add melted Ghee and incorporate gradually, kneading to make dough soft. Cover with a moist cloth and keep aside for 50 minutes. 

Divide the dough into 15 equal portions. Roll into balls and place on a lightly greased surface. Cover and keep aside. 

Heat oil to smoking point and reduce to medium heat. Roller each ball flat about 5" diameter and deep fry until golden brown, turning once to ensure it puffs.
