INGREDIENTS
500g bitter gourd
6 shallots, sliced
2 green chilies, chopped
2 tbsp coriander leaves, chopped
2 lime, juice extracted
salt to taste
oil for deep frying
coriander leaves, chopped
METHOD
Scrape and cut the bitter gourds into rounds. Rub a tsp of salt and leave for 1/2 hour. Squeeze out the liquid and wash the bitter gourd to remove bitterness. 

Deep fry until brown and crispy. Before serving mix in the rest of the ingredients.

Serve hot.
