INGREDIENTS
200g patatoes, peeled and sliced thin
200g capsicum, thinly sliced
250g cabbage, chopped thinly
6 cloves garlic, chopped
2" piece ginger, sliced thin
2 large onions, sliced
2 tomatoes, cut into fours
2-3 green chilies, chopped
1 tsp cumin powder
1 tsp coriander powder
1 tsp red chili powder
1 tsp dry mango powder
1/2 tsp black pepper powder
2-3 tbsp oil
salt to taste
coriander leaves to garnish
METHOD
Heat oil in a kadahi (wok) and fry onions, ginger, garlic and potatoes. Fry until potatoes are tender. Add all the rest of ingredients and cover the wok and cook for a few minutes. Mix well and garnish with chopped coriander leaves. Serve immediately with rice or roti.
