Cut the pork into thin slices about the size of a large postage stamp.Place the pork in a large bowl and mix with the sherry and cornflour.
Cut the cucumber into thin slices about the same size as the pork.
Heat the oil in a wok or frying pan and stir fry the cucumber slices,reserving a few slices,for 1 minute.Add the pork followed by salt,sugar and soy sauce and stir fry for 2-3 minutes.Finally,add the sesame seed oil,blend well and serve immediately,garnished with the reserved cucumber slices.
