INGREDIENTS
500g brinjals (long variety)
8 tbsp szechuan sauce (recipe given)
3 tbsp cooking oil
salt to taste
METHOD
Cut brinjals into 3" long pieces. Heat oil in a wok. Add the brinjals and salt. Fry till brinjals are cooked. Mix in the Szechuan sauce. Serve hot with steamed rice.
