INGREDIENTS
500g oval medium sized brinjals
3 tsp hot curry powder
1 tsp cumin powder
1 tsp chili powder
1/2 tsp turmeric powder
3-4 tbsp oil
salt to taste
TO POUND:
1/2 tsp aniseeds
1 tsp cumin seeds
1 fresh red chili, deseeded
2 green chilies, deseeded
1 stalk coriander leaves
1 tomato, remove seeds
2" piece ginger
4 cloves garlic
8-10 shallots
METHOD
Pound the above ingredients to a semi coarse consistency. Add curry powder, cumin powder, salt, chili, and turmeric powder to the pounded ingredients. Wash and cut brinjals into halves length-wise. Slit them half way through. Rub brinjals with salt and 1 tsp of turmeric powder. Keep aside. Stuff 1 tsp of the mixture into the slit of brinjals and press slightly until firm. Heat oil and gently put in a few brinjals at a time with the flat surface facing down. When they are well done then turn over to cook other side until brown. Dish out into grease-proof paper and serve hot.
