Wash potatoes and cook without peeling the skins in boiling salted water until tender. Drain and cut each in half.
Using a spoon, scoop out the insides carefully taking care not to damage skins. Mix potato with cottage cheese, chives, pepper and butter to form a smooth mixture.
Fill the skins with this mixture and place the 2 halves back together. Place on a baking tray, sprinkle with coarse salt and paprika. Cook in a moderate oven for fifteen to twenty minutes or until skins turn a nice golden brown. Serve hot with a nice salad for a light tasty meal.
