INGREDIENTS
4 thick fish fillets or cutlets
4 kaffir lime leaves, shredded
1 fresh red chili, chopped
1/4 cup/60 ml/2 fl oz lime juice
1 tsp sesame oil
METHOD
1. Place fish in a shallow glass or ceramic dish. Scatter with lime leaves and chili, then sprinkle oil and marinate for 5 minutes.

2. Heat a nonstick char-grill or frying pan over a medium heat. Drain fish, add to pan and cook for 2-4 minutes each side or until flesh flakes when tested with a fork.

Tip: Steamed Greens with Lime - steam or microwave 250g/8 oz each of broccoli and asparagus until just tender, drain and place in a serving bowl. Sprinkle with fresh lime juice, add freshly ground black pepper to taste and toss.
