"I was keen to use my creativity to craft something new every day. Being a chef, you learn a lot about different cultures, their tastes and have an opportunity to reinvent flavours. It was an easy decision to make when I had to choose between a conventional nine-to-six job and hospitality", says Arora.
Vikram took up every opportunity that came his way to build on his knowledge. It led him to don many caps from coffee shop supervisor to management trainee to banquets manager. Having recently moved from Hong Kong to Mumbai, he easily blended into the fast paced Mumbai life. Arora explains, "Mumbai inspires you to fuse the best of India onto your plate with its perfect blend of old, new and quirky."
During his leisure time,Vikram enjoys reviewing electronic gadgets and travelling across the country. He is currently busy constructing a website, where he will be sharing his experiences, food photography and menu creations; which he hopes would enthuse many. For now you will see him working hard in the San-Qi kitchen to serve dishes that are not only delicious but also visually and aromatically appealing, making every guest want to devour their meal.
