INGREDIENTS
1 1/2 cups uncooked rice
3 cups water
3 tbsp taco seasoning mix
3 cloves garlic, sliced
100 g kidney beans
4 tbsp tomato puree
6 diced tomatoes
salt and pepper to taste
1/2 cup shredded lettuce
chopped red chili, optional
METHOD
In a saucepan bring 3 cups water to a boil. Add rice and kidney beans and stir. Reduce heat, cover and simmer for 45 minutes. Remove from heat and let stand for 15 minutes.

Stir in taco seasoning, garlic, tomato sauce, diced tomatoes, salt, pepper, lettuce and red chili if desired.

Cook over medium heat until heated through.
