INGREDIENTS
200g feta cheese, diced
2 large tomatoes, seeded and diced
2 cans chickpeas, rinsed and drained
125g baby spinach leaves
2 cloves garlic, crushed
2/3 cup bottled italian dressing
1/4 cup firmly packed fresh italian basil leaves, shredded
salt and pepper to taste
METHOD
Wash and dry spinach leaves. Put into a large bowl, add in the rest of the ingredients and mix well, and season with salt and pepper. Adjust seasoning if necessary.
